Sesame is a common ingredient in cuisines across the globe for its rich nutty flavor. Sesame can be seen on the top of burger buns, baked into crackers, sprinkled over sushi, salads or other Asian cuisines.

Til Ki Chikki

A Crunchy snack made with sesame seeds and sugar:

Ingredients: 200-gram Til (white sesame seeds), 500 Gram Sugar, 1 cup of water, and a tsp baking soda.

Procedure:

  • Pour the sugar in luke-warm water, increase the temperature and boil until the syrup becomes viscous.
  • Let the syrup cool off and pour the Til in it and stir.
  • Mix in soda and leave to set in thin layers.

Sesame Chicken

Chicken baked with sesame seeds served with spring onions and tomatoes ketchup:

Ingredients: 4 boneless chicken breasts, 2 lemons, 100 Ml yogurt, 1 Tbsp raw papaya paste, 1 tsp garam masala, 1/2 tsp green cardamom seeds (ground), 3 Tbsp oil, salt.

For coating: 3 Eggs, 2 Tbsp Flour, 3 Tbsp Sesame seeds, 3 Tbsp Coriander paste, green chilies.

Procedure:

  • Chicken pieces are cut into smaller cubes and left to be marinated in vinegar, lemon juice, yogurt, garam masala, Green cardamom seeds, and salt.
  • Beat eggs, flour, salt, green chilies, and coriander together, then put the marinated chicken into the batter and then roll into sesame seeds.
  • It is then deep-fried in oil or baked at 220 C for about 10 minutes.

Sesame Apple Salad

The goodness of fruits with a nutty twist:

Ingredients: 2 apples, 2 medium carrots, 1 bunch small radishes, 1/2 cup golden raisins, chopped fresh parsley, and mint.

For the dressing: 1/4 cup cider vinegar, honey, dijon mustard, salt and pepper to taste, 2 Tb spoon toasted sesame seeds.

Procedure:

  • Apples are cut in thin slices; carrots are peeled and cut into matchstick-size and radishes into thin strips. Gently toss and mix the fruits with raisins, parsley, and mint.
  • In a small bowl, whisk together, vinegar, honey, Dijon mustard, salt, and pepper. Pour it over the fruits, mix it well and sprinkle sesame seed over it.
